Recipe: Lemon Garlic Roasted Salmon


  • 4 salmon fillets (about 6 ounces each)
  • 2 lemons, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
  • Pat the salmon fillets dry with paper towels and place them skin-side down on the prepared baking sheet.
  • In a small bowl, whisk together the minced garlic, olive oil, lemon juice, lemon zest, dried oregano, dried thyme, salt and pepper. Drizzle the mixture evenly over the salmon fillets, ensuring they are well coated.
  • Arrange the lemon slices on top of the salmon fillets, covering them evenly. The lemon slices will infuse the salmon with bright citrus flavor as it roasts.
  • Place the baking sheet in the preheated oven and roast the salmon for 12-15 minutes, or until the fish flakes easily with a fork and is cooked to your desired level of doneness.
  • Once the salmon is done, remove it from the oven and garnish with freshly chopped parsley for a pop of color and freshness. Serve the lemon garlic roasted salmon hot with your favorite side dishes, such as steamed vegetables, quinoa, or a crisp green salad.
