July Fruit of the Month: Watermelon

The July Fruit of the Month is Watermelon!

Did you know…

While most of us can’t think of watermelon without thinking of summer get-togethers, watermelon’s place at American picnic tables is only the most recent development in the history of this amazing fruit.

Originating in southern Africa (where it grows wild), watermelon eventually found its way to ancient Egypt, where it was first grown as far back as 2000 B.C. In fact, watermelon seeds were discovered in King Tut’s tomb! Spreading from Egypt, this fantastic fruit could then be found in the Middle East and India in the 7th century, and then as far away as Spain and China. Europeans eventually brought the watermelon to North, Central, and South America in the 16th and 17th centuries. Today, it’s one of the most popular fruits in the world.

In addition to being quite the well-traveled fruit, watermelon is incredibly good for you. It has a high water content and provides decent amounts of the electrolyte potassium—so not only will watermelon hydrate you, but it’s great for balancing the water content in your cells and fighting off cramps—yet another reason to have watermelon on hand at the beach, lake, or poolside! Watermelon also has plenty of vitamin A (good for skin, eyes, white blood cells), vitamin C (a natural antioxidant), and B6 (good for nerves, blood, antibodies, and protein digestion).

In terms of nutrition, watermelon claims one of the top spots for lycopene content (only guava and a few others have more lycopene per serving). Adding more watermelon to your diet is a surefire way to get more of this essential antioxidant.

So… “How do I pick the best melon?”

It’s actually easier than you think! First, check the field spot (the lighter part of the melon that rested on the ground during its growth). Is the field spot cream-yellow (good) or orange-yellow (better)? Then it’s ripe. And don’t shy away from “webbing.” The dark brown splotches that “web” over parts of some melons aren’t a bad sign—they’re actually proof of how many times the flower was pollinated by bees! More pollination, more webbing… better melon. Shape is important too—the rounder the melon, the less watery and more sweet it will be. The melon should also feel heavy for its size, and sound hollow when knocked or thwacked. Finally, pay attention to the stem. Larger, green stems indicate the melon was picked too soon. Look for a smaller, drier, brownish stem.

The Delicious & Nutritious Superpowers of Diabetes-Friendly Foods

For people with diabetes, making the right food choices can sometimes feel complicated or confusing. And while individual dietary needs should always be carefully discussed with your doctor or nutritionist, there are a few go-to diabetes-friendly foods – sometimes called “diabetes superfoods” – that will not only come to the nutritional rescue but may also help make meal planning and snacking a little easier.

A great place to start is with fruits and vegetables. Dried, canned, frozen, or fresh all contain the same overall nutritional benefits and will hit the spot when you need a quick snack, or can even fill you up when you’re ready for a meal. Here are just a few reasons to put fruit and veggies at the top of your list:

  • Fruits and veggies are packed with nutrients that can boost your energy levels.
  • They provide a solid dose of fiber which helps fill you up and keeps your digestive system happy!
  • Low calories and lots of color and texture to add to your plate.
  • Eating more fruits and veggies may lower your risk for many diseases including some types of cancer, high blood pressure, and even heart disease.
  • Fruits and veggies have low glycemic indexes which help keep blood sugar levels steady.

There are, of course, a few standout fruit and veggie superstars that you’ll want to have on-hand whenever possible:

  • Dark leafy greens like spinach and kale are bursting with so much good stuff, you simply can’t eat too much!
  • Citrus fruit like lemons, limes, grapefruit, and oranges will give you your daily supply of vitamin C and soluble fiber.
  • Berries of all types are delicious little powerhouses packed with antioxidants, vitamins, and fiber making them a sweet treat anytime.

In addition to fruit and vegetables, there are some other nutrient-rich-good-for-your-health-diabetes-friendly and delicious foods to keep in mind when you are planning your menu:

  • Beans are a great source of fiber, magnesium, potassium, and protein. In fact, just a 1/2 cup of beans gives you as much protein as an ounce of meat without the saturated fat.
  • Sweet potatoes can be baked, mashed, roasted, or chunked and added to all kinds of dishes. Versatile and packed with fiber and Vitamin A they are a yummy addition to your plate.
  • Tomatoes are another standout food that can be enjoyed raw, cooked, pureed, as a sauce or soup, and are bursting with vital nutrients like Vitamins C and E.
  • Fish – any fish high in Omega-3 fatty acids (like salmon) is an excellent addition to your menu. Try it baked, grilled, or broiled twice a week and you’ll be well on your way to meeting the US Dietary Guidelines recommendation of 8 ounces of seafood per week.
  • Whole grains are loaded with magnesium, B vitamins, chromium, iron, and folate. Check the label to make sure the first ingredient listed uses the word “whole” (like “whole wheat” for example). Brown rice, wheatberries, oats, and oatmeal are also “whole” grains.
  • Nuts and seeds can be a hunger-buster when the munchies come calling. Just an ounce will go a long way toward controlling your appetite and as an added bonus will give you a nice dose of magnesium and fiber.
  • Milk and yogurt (fat-free or low-fat varieties) contain calcium and many fortified products are a good source of vitamin D as well. Combine with your favorite fruits and veggies for a perfect filling snack.

Meal planning doesn’t have to be a chore when you start with a list of diabetes-friendly foods. And don’t forget: 1/2 of your plate should be fruits and vegetables, 1/4 protein (beans or lean meat), and 1/4 should be whole grains.

Check out the American Diabetes Association for fantastic healthy recipes and for even more ways to incorporate diabetes-friendly foods into your regular meal planning routine.

The Munch Code Game is a fun way for kids, parents, and teachers to practice healthier between meal snacking. Based on a simple color code, similar to traffic lights, the player discovers which foods and drinks are “green” (eat a bunch) which ones are “yellow” (have just a little) and which are “red” (not so much).

The app (for iPhone and iPad) comes in handy wherever and whenever people are making decisions about what to eat and drink “on the fly,” — especially grabbing snacks at concessions and convenience stores.

Master Food and Beverage List

The South Dakota Department of Health (DOH) Master Food and Beverage Lists were created in June 2016 and include products and nutrition information available for purchase at that time. It includes a wide variety of snack products that could be utilized in vending machines, snack bars, and micro-markets. However it does not contain all available products. DOH lists these products without preference or endorsement. Based on the nutrition fact label, these products meet the guidelines for the GREEN, YELLOW, or RED Munch Code category based on the South Dakota Healthier Vending & Snack Bar Standards. It is important to pay close attention to the product size. The same product in different sizes can fall into different Munch Code categories due to increased or decreased portion size.

The product lists were developed to provide worksites with a basic list of food and drink options that are currently on the market. Below are some possible ways to utilize the lists:

  • Search for the name of your favorite food or drink to quickly determine GREEN, YELLOW, or RED status.
  • Use to determine the color status of the products your vendor currently offers if a vendor product list is available.
  • Search for additional GREEN and YELLOW options to offer or to negotiate with your vendor to make available.
  • Utilize during your initial Vending Machine and Snack Bar Analysis (Appendix B in the toolkit). If the products currently in the vending machine or snack bar are in these Master Lists it will be a fast way to determine the color status.

To search product options, use the following Excel files:

Beet Lesson Plan

Fun Facts

  • Beet juice is widely used as a “natural” dye to give pink or red coloration to processed foods.
  • The color of beet roots can range from dark purple to bright red, yellow, and white. When cut transversely, the roots show light and dark rings, sometimes alternating.
  • The Chioggia beet is red and white-striped and nicknamed the “candy cane” beet.
  • Beets have the highest sugar content of any vegetable.
  • Small beets (about a half-inch in diameter) are good for eating raw. Medium and large-sized beets are best for cooking. Very large beets (more than three inches in diameter) may be too woody for eating.

Banana Lesson Plan

Fun Facts

  • The banana plant is not a tree. It is actually the world’s largest herb!
  • Americans have made bananas their favorite fruit. The average person in North America eats 29 pounds of bananas a year.
  • Nearly an ideal food, the banana has a great deal to offer nutritionally.
  • Bananas contain less water than most other fruits, so their carbohydrate content, by weight, is higher, which is one of the reasons that bananas are a favorite of endurance athletes.
  • Athletes trying to naturally replace spent nutrients should consider eating a few bananas before, and after strenuous workouts.

Avocado Lesson Plan

Fun Facts

  • Avocado trees can grow as tall as 80 feet and produce as many as 400 fruits annually.
  • The United States provides 6 percent of the world’s crop, ranking third behind Mexico and Chile.
  • Forty-three percent of American household’s purchase avocados.
  • Consumers love the rich, creamy texture of the Hass avocado and growers favor it for its disease resistance and year-round growing cycle.
  • Mature avocado trees grow to an average of 65 feet tall and, if grown from seed, will produce fruit any time after five to 20 years. It is biennial-bearing and may produce heavy crops one year followed by poor yields in the next.
  • Intolerable to freezing temperatures, this evergreen tree can only grow in subtropical and tropical climates.
  • The grafted cuttings produce fruit within one to two years, commercial avocado orchards are planted using grafted trees and rootstocks. The species is unable to self-pollinate and most cultivars today are clonally propagated (without seed reproduction).
  • The avocado fruit does not ripen on the tree but will fall off and ripen on the ground. Commercial avocados are picked unripe and shipped to ripen on the store shelf.

  • Asparagus cooks fast — Roman Emperor Augustus coined the phrase “velocius quam aspargi coquantur” which means “faster than you can cook asparagus.” Over the years, this has been shortened to “in a flash.”
  • Per one-half cup serving, asparagus has the highest content of folate of any vegetable.
  • Ancient and medieval medicinal practices used crushed asparagus tips to reduce swelling and alleviate pains associated with bee stings, wounds and infections.
  • In proper conditions, asparagus can grow as much as one inch per hour — up to 12 inches in one day.

Apples Lesson Plan

Fun Facts

  • Apples have existed for the length of recorded history and are believed to have originated in the Caucasus, a mountainous area between what are now the Black and Caspian Seas.
  • Through the rise of Greece, the fall of Persia and migrations to Rome and Europe, apples were cultivated and – through a process called grafting, which produces new varieties – disseminated throughout various cultures.
  • Apples experienced surges of popularity and, at one point, some varieties were nearly lost, but were saved due to traditional orcharding by the English church.
  • Apple growing arose again in the 15th century Renaissance Italy. Eventually, France and England followed suit, and the fruit remained popular in Europe well into the 1800s, when European settlers brought apples with them to the Americas to share the cultivation and traditions.

Testimonials

“It’s been really fun to watch the kids experience new types of fruits and vegetables. The program is fun and super easy. The best part is having the kids tell us that their favorite part of their week is our presentation!”

– Carly Carlson

“The HOM produce, Spinach, made it on the lunch menu today per students’ request. One of the classrooms liked the spinach so much this morning when they tried it during HOM that they requested a spinach salad for lunch.”

– Deseree Corrales

“We were amazed with the number of students who eagerly participated even on green vegetable days. Very few refused to try a new vegetable.”

– South Dakota Teacher

“Broccoli was already on the menu so we just made a spinach/broccoli salad for [our] class. When we took them their salad, another class saw it and wanted the same. We ended up serving a spinach salad to the rest of the classes as well.”

– Deseree Corrales

“HOM has been an exciting adventure for me. I never thought a short presentation one time per week could make such a big difference for so many kids. It’s great to know that I’m helping them learn about making healthy choices and actually making them want to try new things – especially new vegetables!”

– Hannah Riker

“I’ll be honest, I’m not a huge fan of vegetables, but giving HOM presentations and encouraging kids to try them has even made me try some things I might not have before. They get to learn something new about a fruit or a vegetable and we get to see them all smile.”

– Cassie Ehmann

Avocados: Good or Bad?

The Good, the Bad & the Unsaturated

Here’s the good news: according to the American Heart Association both polyunsaturated and monounsaturated (which are both unsaturated) fats may help improve your blood cholesterol when used in place of saturated and trans fats.

Translation: eating foods that are rich in unsaturated fats – such as salmon, walnuts, and avocados – may lower your cholesterol and lower your risk of heart disease and stroke.

Not only do avocados contain high levels of the good fats our bodies need, but they are also a great source of lutein, which has been linked to improved brain health in older adults and improved cognitive function in young children. In fact, avocados took center stage in a recent study and the results showed clear benefits to the “brain health” of the older adults who ate an avocado a day. Now, that’s something to think about!

Of course, avocados aren’t a stand-alone miracle food but they do pack a nutritional punch.
For instance:

  • Avocados contain more than 20 vitamins and minerals per serving.
  • They are chock-full of fiber, folate, and antioxidants.
  • A single serving (about 1/5 of a medium avocado) contains only 50 calories.
  • Contains no cholesterol.

The bottom line is that avocados are a powerful source of vitamins and minerals and contain high levels of unsaturated fats. And, if you are trying to lower your cholesterol, reduce your risk of heart disease or stroke, or just want to improve your diet by adding more fruits and vegetables… including foods like avocados in your meal plan might not be a bad place to start.

Walk Walk Walk

South Dakota – it’s time to walk! Walking is one of the easiest ways to increase physical activity levels. The Surgeon General wants walking to become a national priority and we are following in those footsteps by encouraging everyone to walk: walk more, walk often, walk with friends, walk about 20 minutes, walk at work, walk with your kids or grandkids, walk a cat or a dog… just walk! Why walk 20 minutes?

Walking is the single most recommended form of exercise and we know that when you walk with someone you are more likely to form a new habit. And, because there are so many ways to walk – fast or slow, up a hill, down a sidewalk, on a path, at the mall, in the hall, or off on a trail – and so many levels of intensity, it’s easy to tailor a walking habit that fits your personal physical activity goals.

walking_habit_final20_minutes_final4-31

The Physical Activity Guidelines for Americans

recommends that adults get at least 150 minutes of moderate aerobic physical activity per week, and children get at least 60 minutes per day.

Now–that might seem like a big number, but when you break it down–it’s just slightly more than 20 minutes per day. You can do 20 minutes–right?

Let’s get moving South Dakota! Grab a friend, a co-worker, a kid, a cat… and let’s move the needle: only one half of adults nationwide meet the Physical Activity Guidelines–we can do better.

Fitness Trends: Barre Workouts

Ballerinas have been doing Barre workouts for years, and now in the 21st century these awesome workouts are becoming mainstream. Ballet Barre workouts have been become very popular in the last 10 years and have found their way to South Dakota.

What is a Barre Workout?

Barre workouts are a combination of yoga and Pilates poses, which utilize a ballet barre to execute the movements. Barre uses isometric exercises that target the whole body. Barre participants hold exercise poses for a set amount of time and then pulse for a series of repetitions. Pulses are small and controlled movements that are no higher than 5 inches. Barre is a class geared to increase muscle strength, that also increases your heart rate during class. Most Barre classes will consist of a resistance portion where you “feel the burn” followed by a brief stretching break.

Who can do Barre?

Anyone!! Men, women, boys, and girls of all ages, shapes, and sizes. You don’t have to be a ballerina to practice Barre poses. Barre is a low impact activity. It can easily be tailored to meet your body’s specific needs. Most Barre classes will allow participants to go at their own pace.

What to expect?

Barre is a full body workout. It will involve exercises geared to tone your arms, legs, and abs. Many classes will give participants the option of using small hand weights, resistance bands, and stability balls. Tip: if it is your first class, opt for lighter hand weights or no hand weights at all. It will give you a sense of your ability level and how your body will react to the exercises.

Throughout class, your teacher will likely give you prompts to help you avoid injury and get the most out of your workout. You will likely have sore muscles after your first couple workouts, which just means you worked them hard. Most of all, you can expect to sweat and have lots of fun!!

What do I wear?

A typical Barre class is done barefoot or in socks. You have the option of purchasing special sticky socks, however this is not necessary. Wear clothes you feel comfortable being active in such as yoga pants or capris, and a light breathable top. You will need a bottle of water to stay hydrated throughout the class and a sweat towel may come in handy as well. Most of all, arrive with a smile on your face and a good attitude because you are about to get the best workout of your life.

Next time you are in the mood to switch up your workout routine, try a Barre class! Do a search of fitness studios in your area and inquire if they offer Barre. You won’t regret it!
